Mixed Berry Croissant Bake Recipe

Ingredients

  • 6 large croissants
  • 2 cups mixed berries
  • 1 cup milk or heavy cream
  • 4 eggs, beaten
  • 2 teaspoons matcha powder
  • 1/4 cup sugar
  • 1 tablespoon demerara sugar, for sprinkling

Method

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish with cooking spray.
  2. Arrange the croissants in a single layer in the prepared baking dish, making sure to squish them if necessary. Sprinkle the chopped mixed berries evenly over the croissants.
  3. In a medium bowl, whisk together the milk (or heavy cream), beaten eggs, 1/4 cup of sugar, and matcha powder until well combined. Pour this mixture evenly over the croissants and berries. Sprinkle the turbinado or granulated sugar over the top.
