Matcha Gingerbread Men
Who doesn’t love those classic Christmas treats? Matcha and spices pair well together. Try this version using spice matcha blend, they are delicious, it smells like Christmas when they are baking!
Ingredients
- 450g plain flour
- 3tsp baking powder
- 1.5 Tbsp spiced matcha
- 85g butter (at room temperature)
- 150g demerara sugar
- 1 large egg (at room temperature)
- 2 tsp vanilla extract
- 180g Maple syrup
Method
- Cream the butter and sugar until it is fluffy (best results obtained with a food processor or electric beater)
- Add egg and vanilla and then the maple syrup
- In a separate bowl stir the flour, baking powder and spiced matcha
- Add the dry ingredients gradually to the batter when all ingredients are combined the dough should be soft and a little sticky
- Form a rectangle with the dough and wrap it in cling film, leave it to rest in the fridge for a couple of hours.
- Preheat the oven to 180c
- Roll out the dough with a rolling pin in between 2 baking paper sheets, roll the dough until it is 1 cm thick
- Using a cookie or gingerbread men cutter, press firmly on the dough and cut out the shapes
- Use a palette knife to transfer the gingerbread men on a baking tray lined with parchment paper
- Bake for 12 minutes
- Let them cool down and enjoy
Delicious as they are you can also decorate them with royal icing, they will then be more sweet
