Mixed Berry Croissant Bake Recipe

Ingredients

  • 6 large croissants
  • 2 cups mixed berries
  • 1 cup milk or heavy cream
  • 4 eggs, beaten
  • 2 teaspoons matcha powder
  • 1/4 cup sugar
  • 1 tablespoon demerara sugar, for sprinkling

Method

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish with cooking spray.
  2. Arrange the croissants in a single layer in the prepared baking dish, making sure to squish them if necessary. Sprinkle the chopped mixed berries evenly over the croissants.
  3. In a medium bowl, whisk together the milk (or heavy cream), beaten eggs, 1/4 cup of sugar, and matcha powder until well combined. Pour this mixture evenly over the croissants and berries. Sprinkle the turbinado or granulated sugar over the top.
  4. Cover the baking dish tightly with plastic wrap and refrigerate for at least 1 hour, or up to 12 hours, to allow the flavors to meld.
  5. When ready to bake, remove the baking dish from the refrigerator and discard the plastic wrap. Bake the croissant bake, uncovered, in the preheated oven for 30 minutes, or until the top is golden brown and the custard is set.
