Matcha Christmas cookies

These festive matcha cookies make a beautiful Christmas tree decoration. Or you could pack them into boxes as end-of-term gifts for teachers, family, and friends.

Ingredients

  • 140g Icing sugar, sieved
  • 1 tsp vanilla extract
  • 1 egg yolk
  • 250g butter (room temperature)
  • 375g plain flour
  • 3tsp matcha

Method

  1. In the mixing bowl of your mixer add the icing sugar, vanilla extract, egg yolk and soft butter in cubes and stir together till well combined (you can use a bowl and a wooden spoon if you do not have a mixer)
  2. Sieve the matcha over the flour and add it to the mix to make a firm dough
  3. Leave to rest in the fridge for 20 minutes
  4. Preheat the oven to 180c
  5. Roll out the dough in between 2 sheets of baking paper till you have reach the thickness of £1 coin
  6. Cut out Christmas shapes with the chosen cutters (cut a small hole with the tip of a knife in the top of each cookie for Christmas tree decoration)
  7. Bake for 10-12 minutes
  8. Let them cool down on the baking tray
  9. You can either pack them in tin Christmas boxes for gifts or you add gold thread or clear fishing line to hang them on the tree
