Intense Matcha Cake

A lusciously vibrant vegan matcha cake to light up any occasion.

Cake

  • 200g sugar
  • 225g vegan butter
  • 240g vegan Greek yogurt
  • 250g flour
  • 4 tbsp matcha powder
  • 1 tsp baking powder
  • 1 tsp vanilla extract

Method

  1. Preheat your oven to 175°C. Grease and flour a cake pan or line it with parchment paper.
  2. In a mixing bowl, cream together the vegan butter and sugar until light and fluffy.
  3. Add the vegan Greek yogurt and vanilla extract to the mixture and beat until well combined.
  4. In a separate bowl, sift together the flour, matcha powder, and baking powder.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until a smooth batter forms. Be careful not to overmix.
  6. Pour the batter into the prepared cake pan and spread it out evenly.
  7. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  8. Once baked, remove the cake from the oven and let it cool in the pan for 10 minutes. Then transfer it to a wire rack to cool completely.
  9. Once cooled, you can optionally dust the cake with powdered sugar or frost it with your favorite vegan frosting.
