Intense Matcha Cake
A lusciously vibrant vegan matcha cake to light up any occasion.
Cake
- 200g sugar
- 225g vegan butter
- 240g vegan Greek yogurt
- 250g flour
- 4 tbsp matcha powder
- 1 tsp baking powder
- 1 tsp vanilla extract
Method
- Preheat your oven to 175°C. Grease and flour a cake pan or line it with parchment paper.
- In a mixing bowl, cream together the vegan butter and sugar until light and fluffy.
- Add the vegan Greek yogurt and vanilla extract to the mixture and beat until well combined.
- In a separate bowl, sift together the flour, matcha powder, and baking powder.
- Gradually add the dry ingredients to the wet ingredients, mixing until a smooth batter forms. Be careful not to overmix.
- Pour the batter into the prepared cake pan and spread it out evenly.
- Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Once baked, remove the cake from the oven and let it cool in the pan for 10 minutes. Then transfer it to a wire rack to cool completely.
- Once cooled, you can optionally dust the cake with powdered sugar or frost it with your favorite vegan frosting.
