Matcha Marble Shortbreads
How to create the perfect Matcha Marble Shortbreads.
For the Shortbread Base
- 250g cold salted butter
- 80g icing sugar
- 90g milk powder
- 300g plain flour
For the Light Matcha Chocolate Layer
- 400g white chocolate
- 25g butter
- 1 tbsp matcha powder (sifted)
For the Intense Matcha Chocolate Layer
- 50g white chocolate
- 6g butter
- 1 tbsp matcha powder (sifted)
For the White Chocolate Layer
20g white chocolate
6g butter
Method
1 - Prepare the Shortbread Base
- In a mixing bowl, sieve and combine the icing sugar, milk powder, and plain flour.
- Add the cold butter and rub it into the dry ingredients using your fingertips until the mixture resembles coarse sand.
- Press the shortbread dough firmly and evenly into a square baking tin lined with parchment paper.
- Bake in a preheated oven at 150°C for 40 minutes, or until lightly golden. Remove and let cool completely in the tin.
2 - Make the Light Matcha Chocolate Layer
- Melt 400g white chocolate and 25g butter together over a double boiler or in the microwave, stirring until smooth.
- Sift 1 tbsp matcha powder into the melted mixture and whisk until fully incorporated.
- Pour this light matcha chocolate layer over the cooled shortbread base, spreading evenly with a spatula.
3 - Prepare the Intense Matcha Chocolate and White Chocolate Layers
- For the intense matcha chocolate, melt 50g white chocolate and 6g butter together, then mix in 1 tbsp matcha powder until smooth.
- For the white chocolate, melt 20g white chocolate and 6g butter together until smooth.
4 - Create the Marble Effect
- Using piping bags or small spoons, draw thin lines of the intense matcha chocolate and white chocolate over the light matcha chocolate layer.
- Use a toothpick to swirl the lines gently, creating a marble effect.
5 - Set and Serve
- Place the tin in the fridge for at least 1 hour to allow the chocolate layers to set firmly.
- Once set, carefully remove the shortbread from the tin and cut it into squares.
Cold Butter for Shortbread: Ensure the butter is cold to achieve a crumbly, sandy dough texture.
Smooth Chocolate Layers: For best results, sieve the matcha to avoid lumps and stir well to ensure smooth layers.
Cut Cleanly: Use a sharp knife heated in hot water (and dried) to cut clean, precise squares.
