Matcha Christmas cookies
These festive matcha cookies make a beautiful Christmas tree decoration. Or you could pack them into boxes as end-of-term gifts for teachers, family, and friends.
Ingredients
- 140g Icing sugar, sieved
- 1 tsp vanilla extract
- 1 egg yolk
- 250g butter (room temperature)
- 375g plain flour
- 3tsp matcha
Method
- In the mixing bowl of your mixer add the icing sugar, vanilla extract, egg yolk and soft butter in cubes and stir together till well combined (you can use a bowl and a wooden spoon if you do not have a mixer)
- Sieve the matcha over the flour and add it to the mix to make a firm dough
- Leave to rest in the fridge for 20 minutes
- Preheat the oven to 180c
- Roll out the dough in between 2 sheets of baking paper till you have reach the thickness of £1 coin
- Cut out Christmas shapes with the chosen cutters (cut a small hole with the tip of a knife in the top of each cookie for Christmas tree decoration)
- Bake for 10-12 minutes
- Let them cool down on the baking tray
- You can either pack them in tin Christmas boxes for gifts or you add gold thread or clear fishing line to hang them on the tree
